Sunday Morning Blueberry Muffins

1/4 white chia seeds

2 cups oat flour

1 cup mashed banana

1/4 melted butter

1 egg

1 teaspoon aluminum-free baking powder

1/2 teaspoon sea salt

1 tablespoon maple syrup

1 tablespoon lemon juice

2 cups blueberries

Preheat oven 375 degrees. Prepare 12 cup muffin pan. Place chia seeds in a blender alone, and blend on high until finely ground. Add the mashed banana, oat flour, baking soda, egg, sea salt, maple syrup, and lemon juice into the blender until smooth and combined into batter. Pour batter into a bowl and fold in the frozen blueberries. Place in muffin pan and bake 20 minutes.
