Honey & Happiness Overnight Oats
Yield: 4 servings

Ingredients 2 cups steel cut oats 4 cups water 4 cups coconut milk 1/3 cup dried apricots, chopped 1/4 tsp. sea salt honey to taste Directions In a mixing bowl, combine steel cut oats, water, coconut milk, dried apricots and sea salt. Transfer the mixture to a slow cooker. Set the slow cooker to the low setting, cover and cook overnight (7-8 hours). Enjoy adding more sea salt or sweetener to taste.
