Pickled Watermelon-radish salad

Watermelon radish remind me not to judge a book by it's cover. They have a plain white exterior, can be confused with small turnips, and don't really stand out much. On the inside though, they are pure magic! They practically sparkle in hot pink. They are in season, and are the colorful answer to any dish. They are excellent for digestion, detoxing, and just loaded with fiber. There were a couple in my CSA share this week, and I decided a quick soak in a vinaigrette would make this an easy addition to top dishes I am making this week as part of meal prep. However, after tasting one, I decided to turn it into a main salad, so good!
Ingredients
2 medium to large watermelon radishes, sliced thin
½ small white onion, very thinly sliced
2 tablespoons extra virgin olive oil
2 tablespoons apple cider vinegar
Salt and pepper, to taste
Instructions
Combine all ingredients in a small bowl and toss together. Cover and refrigerate overnight before serving as a side dish or using as a topping to a mixed green salad
